Air Fryer BBQ Chicken Wings in Homemade BBQ Sauce

These BBQ Chicken Wings really are that special! They are marinaded in one mixture before being pressure cooked for 3 minutes, then they are marinaded in a special homemade BBQ sauce, before being air fried for 8 minutes. The result is something really special! You will require a pressure cooker and an air fryer to make this (an Instant Pot Air Fryer Duo Crisp would be just the ticket), but if you have the necessary equipment, this is a must try!

Air Fryer BBQ Chicken Wings in Homemade BBQ Sauce

Ingredients
  

Homemade BBQ Sauce

  • 2 tsp fine ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp chilli powder
  • ¾ cup brown sugar
  • 2 tsp smoked paprika
  • ½ tsp xanthan gum
  • â…“ cup coconut aminos
  • 680 grams passata average bottle size
  • 2 tbsp apple cider vinegar
  • 4 tbsp extra virgin olive oil approx
  • 3 tbsp blackstrap molasses
  • 3 tsp Celtic sea salt
  • 1 tbsp cornstarch
  • 1 red onion
  • 10 clove fresh garlic
  • 1 cup tomato puree

Chicken Wings

  • 1 kg chicken wings

Chicken Wing First Marinade

  • 3 tbsp coconut aminos
  • 3 tsp Celtic sea salt
  • 1 tsp soy sauce
  • 1 tbsp Datu Puti vinegar or apple cider vingar
  • 1 tsp granulated garlic
  • 2 tsp ground black pepper
  • 1 lime

Pressure Cooker Base Ingredients

  • whole bulb of garlic
  • 1 tbsp whole black peppercorns
  • 6 bay leaves
  • 10 pieces star anise
  • 1 red onion
  • 1 bulb garlic
  • 3 spring onion
  • â…“ cup olive oil extra virgin
  • 2 stock chicken cubes

Chicken Wing Second Marinade

  • 1½ cup homemade BBQ sauce or store bought BBQ Sauce
  • 3 tbsp olive oil extra virgin

Chicken Wing Garnish

  • 1 tbsp sesame seeds

Instructions
 

Preparing the Homemade BBQ Sauce Ingredients

  • peel the garlic and smash it with a large knife
  • then chop the garlic and red onion into small pieces
  • add olive oil to a pan on medium heat
  • add the garlic and onion, stir for a couple of minutes
  • add the black pepper, garlic powder, onion powder, chilli powder and smoked paprika to the pan, and stir in
  • add the apple cider vinegar and tomato puree and stir
  • add the passata and stir in
  • turn the hob to a low heat
  • add the brown sugar and stir in for a few minutes
  • add the molasses, stir in for a few minutes
  • add the xanthan gum and cornstarch, and mix in
  • use a hand blender to blend the entire mixture for a couple of minutes
  • continue for stir and cook for another minute
  • turn off the stove, let the sauce cool down, then bottle it

Preparing the Ingredients for the Chicken Wings

  • cut the onion into quarters
  • cut the whole bulb of garlic and the lime in half
  • cut the spring onion into thirds
  • take the most green part of the spring onion, and cut into small slices
  • cut the ends off the chicken wings
  • (optional) pull out any large hairs in the chicken – use tweezer if necessary

Prepare the marinade for the Chicken Wings

  • add the sea salt, granulated garlic and black pepper to the chicken wings
  • add the Datu Puti, or apple cider vinegar to the meat
  • add the coconut aminos and soy sauce to the meat
  • squeeze the juice out of the lime halves into the meat
  • massage all these condiments, herbs and spices into the chicken meat
  • (optional) let the chicken rest in this mixture for a while

Prepare your Instant Pot or Pressure Cooker

  • put the star anise, bay leaves, garlic and red onion into the pressure cooker
  • add the spring onion, black peppercorn and olive oil to the pressure cooker
  • add the chicken stock cubes
  • pressure cook for 3 minutes

Prepare the chicken wings for the pressure cooker

  • Add the barbecue sauce and olive oil to a bowl, mix in well
  • Once the pressure cooker is ready, open, dip the wings into the sauce at bottom and then transfer to a bowl
  • liberally apply the barbecue sauce to the wings with a brush
  • add one layer of wings in your air fryer, and fry for 8 minutes
  • remove the cooked wings into another bowl and add another layer, fry 8 minutes
  • continue until all the chicken wings have cooked
  • optionally sprinkle the sesame seeds and sliced spring onion to the chicken wings
